African style veggies

African style veggies

Ethiopian style veggies

One small cabbage chopped
4-6 carrots
4-6 potatoes
2 handfuls of green beans
1 head of cauliflower
Hand full of green sweet peas
Chopped green onion
Crush two tomatoes
Potato
A few dashes ( about ½ tsp) of cinnamon, ginger, ground clove,. and turmeric.
A few cloves of chopped garlic
Cayenne or scotch bonnet pepper
Salt

Margarine

Melt margarine with all the spice. Boil potato separate. And chopped veggies to spiced margarine (a veggie alternative to ghee)
Simmer. Add potato
Add crushed tomatoes and stir
Turn down and simmer for about 30 min

This is good with whole grain flat bread or Injera if you can get some.
Along with the flat bread it is also good with Vegan plain yogurt cucumber ( or dairy yogurt if your prefer, as long as it PLAIN) spiced with a little salt and chop cucumber in it.

Peanut sauce with okra and onions.
MUST USE SUGAR FREE IF USING PEANUT BUTTER

Stir fry trimmed okra and long sliced onion. Dont cook all the way.
Get 3-4 tablespoons of Sugar free chunky peanut butter to a large sauce pan, adding water to dilute while bringing to a boil. Simmer. Add thyme, garlic, salt, and cayenne, ginger and one chopped tomato. Add okray and let it simmer for a few minutes. You may add boiled potato as well. Okra and onion should have a some what firm texture. I don't chop my okra. But I do cut it in two pieces.

Alternatively, blend 1 lbs of peanuts with a about 2 cups of water, strain a few times leaving a few tablespoons of the ground peanuts. Bring to a boil with spices. Add tomato. Turn down to a simmer and add stir fried okra and onion 10 min after. Leave to simmer for 10 minutes or until sauce thickens. This could happen in just five minutes, you don't want your okra and onion over cooked.
