Ok folkeses...for those of you that cannot possibly wait until December 1 for me to send you some here is the recipe for you to make your own!!!...have fun and enjoy!!
You will need;
9 medium sized half ripe mangoes (12 cups roughly chopped)
3 cups turbinado sugar
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
1/2 tsp cloves
1/2 tsp dried or 1.25 inch of fresh grated ginger
3 cups of water
Peel and roughly chop the mangoes. Put chopped mangoes and 3 cups of water in large pot and simmer until soft.
In a food processor or blender puree chopped mangoes and water. For a chunkier butter puree 1/2 of the chopped mangoes and finely chop the rest in the blender or food processor. Strain the puree through a fine mesh strainer back into large pot.
Add sugar and spices, bring to a rolling boil. Lower heat to a simmer and reduce until thickened- about 45 minutes to an hour, stirring frequently. Stirring spoon should be well coated when butter is ready and the amount in pot should be down by half.
Ladle into clean and sterilized canning jars with lids. If you are preserving for later boil in a water bath for 10 minutes. Otherwise ladle into jars and use within 2 weeks. Once opened or, if not canned store covered and refrigerate. If preserved (canned) it will last up to a year unsealed in the cupboard or pantry.
I have no idea how long it will last in your house....I'm lucky to have an open jar last for a week in my house.
Everyone I have sent this to has not have it last more than three days. I have had this referred to as liquid crack. It goes excellent with fish, poultry, cheese, bread, hot cereal, ice cream....straight out of the jar.
Now y'all have no excuse!!! LMAO!!!
