Vegetarian Jellof rice and stir-fry veggies

Vegetarian Jellof rice and stir-fry veggies

Basic Vegetarian Jellof rice

One lbs bag of long grain rice (adjust cooking time for brown rice or instant rice)
3 1/2 cups of water
1 chopped Tomatoes
About 4 heaping table spoons of Tomatoes Paste (It is healthier to buy the one in the tub rather then the can…I use a whole tube or whole 4 ounce can)
One whole chopped Sweet Onion and /or Scallion
2 chopped Carrots
Hand full of Peas
2 Vegetable salt free bullion
Chopped bell Peppers
Turmeric
Cayenne Pepper
Sea or Celery Salt
Thyme
Garlic
Bay leaves
Cumin
Peanut Oil

Heat peanut oil in a pan and add all seasonings and vegetables. Add rice and fry for a little bit. Add water, turn down and cook for about 35 minutes.

I like to serve this with stir-fried eggplant and squash on top. I also like this with stir-fried broccoli. But it is equally as nice with greens or tofu.

Also, this is great with ground peanuts on top. Just put a handful in a grinder. I like mine grounded till its like powder, then i throw it on top of the rice or veggies.
